Im in the UK on my iPhone under the carrier settings as well as O2, Vodaphone, T-Mobile and Orange are listed.

What does this mean.

Is it also open to those networks?

did you ssh into your phone and checked the carrier bundle?

The Carrier menu is used when roaming on another network. Both carriers need to have an agreement. It won't let you log on otherwise.

I can choose between two networks here in Australia, but only because they have a domestic roaming agreement.

You might find it useful when roaming internationally, as some networks may be more expensive than others.
