Cases that cover back should not effect ability to use Apple Pay, correct?
As long as they are non conductive
how wold you know if they are non conductive? is aluminum non conductive? or metal such as this case? http://www.amazon.com/iPhone-Spigen...r=1-2&keywords=spigen+iphone+6+plus+case+slim
That case is plastic, not metal. Non conductive.
Unless the case includes a magnetron, you should be safe.
Seriously, though, NFC still works through radio waves. Cases won't affect it. The whole "tapping the device to another device" thing is a gimmick. They don't need contact, just close proximity.
