Is it possible to have more than one screen within categories? Like I have a games folder, just wondering what will happen if I fill up a screen with games can I scroll to another screen? If so is there 9 screens available, like springboard?

Its scrollable like the springboard. I think you can have any number of apps in there. It'd just be hard to find.
