I have an iBook that is basically stripped down to a motherboard and HD and DVD/CDRW Drive. Is it possible to somehow burn disks using it, connected to my iMac?

CD burning through Firewire disk mode?

I'm pretty sure you can just boot it into target mode, put the blank CD in and it should show up on your iMac's desktop as a drive. I know you can read CDs this way, but have never tired burning them.
