Please use caps. And you're thinking a bit far ahead, don't you think?

Redsn0w or Sn0wbreeze depending on firmware.

I'm currently on iOS 5.1.1 non jailbroken as i have apple care, buttttt..... when i get a new iPhone, the apple care will transfer over :) so i want to be able to get past the activation by verizon in order to use it as like an iPod touch.

Jailbreak your phone. It will not void your applecare. I don't know where you got that information. Worse comes to worst and you need to take your phone back to apple, you just restore it. There really is no reason not to jailbreak, if you're worried about warranty.

Not to mention you can hacktivate said phone, with Redsn0w or Sn0wbreeze depending on firmware. Without it being jailbroken.
