The problem with this, at least for me, is that hotspot is not always consistent. It almost always "works," but it takes multiple attempts to hook them together. A cellular plan is so much more frictionless.
Not true for me. My M4 iPad automatically switches, without fail, to my 15 ProMax hotspot if it does not have a WiFi signal. Completely transparent to me.

Mine will do the same but I found out the hard way. The iPad did this and I didn't notice and when I got home it stayed on the hotspot, not switching to WiFi. Since I use the iPad a lot for streaming, etc., it rapidly burned through the high-speed data limit on my phone's plan.

I have used this before with two iPads, but the last two times I have tried to use this plan I get no service, chat and phone support couldnt help, and I give up and get my $10 refunded
 
I recently learned about other PAYG travel eSIM options and that's what I'm trying now. I already knew about Roamless previously but having to create and maintain separate accounts for each eSIM/device was too much effort for me (one of the reasons I stopped using the T-Mobile $10/5GB).

Jetogo (UK exit node, 300-400ms ping) - $5 starting balance, no expiry, shared balance across 4 eSIMs ($1.50/GB for US)

Bcengi (US exit node, 60-70ms ping) - $10 starting balance per eSIM, no expiry, can transfer balances between eSIMs ($1.68/GB for US)

How easy is it to setup Bcengi? Seems to be a good deal.

Pretty easy. Just create an account, buy eSIM (you can use Apple Pay) and scan the QR code with your iPad. You just need to make sure Data Roaming is set to On for the Bcengi eSIM (showed up as "Connect" on my iPad).

It's set by default to automatically refill when the balance drops to $2. The auto-refill can be convenient when traveling so you don't run out of data but you can disable this feature if you don't want any surprise charges.

Their website shows AT&T and Verizon but it seems like they work with T-Mobile as well as that's what I'm connected to right now (automatic network selection). Previously, I was connected to AT&T when I ran the ping test. I haven't tried Verizon yet.

Seems like the only downside is the high ping? I don't have my cellular iPad handy but I would imagine the Prepaid T-Mobile is not that high.

Ping times below 100ms are generally fine even for VoIP or video calls. Also, the iPad I was using only has LTE.

Even the Jetogo eSIM with 300ms ping is pretty usable for web browsing, navigation, etc.

I've had bad experience with 3HK though. That routes traffic through Hong Kong and my ping times were in the ~600ms range.
