I find it strange that it’s not allowed.
It’s bluetooth so I’m sure it’s possible just prohibited

I know it works on my Honda Civic 2016 with no problem at all! The car thinks it’s a phone, i can see my battery status, and signal status on the car’s screen. I also can use siri, apple music etc and all works fine. I guess it depends on which car you have have

I think the Apple support discussion that is referenced in a previous post is referring to playing music via Bluetooth Audio.
It is possible to pair your watch to your car for phone calls. I have done so with my 2011 Honda Pilot.
