El Capitan reset all my changed Iconset.
Disabling csrutil I managed to change all icons including the finder except for the Calendar.
I exchanged the App.icns, and App-empty.icns in the Resources folder but no matter what I do the Calendar icon stubbornly stays the original one.

Any ideas what to do to change it in El Capitan?

Same as in Yosemite, except that you have to turn off rootless first.

In the Resources folder of the Calendar App there is also a folder called Calendar.docktileplugin, choose there Contents and then Resources. There you will also find a copy of App-empty.icns that needs to be changed. Did you do that?
