Can the icon associated with a certain file extension in the Finder be changed?

For whatever reason Finder is using the shell executable icon for any file *.dat. I use a program which records instrument measurements in a *.dat file and I typically use excel for these types of files. I'd like to get Finder to either display the Excel icon or at least just use the blank document icon file.

Actually, even a .csv file, which is by default always opened by excel, doesn't use an excel icon, only a blank document icon. But I see your point, because if I change to open with any other application. The icon immediately changes to the icon for that application. I don't know why in this case that doesn't happen.
