Bought an iPad in France as I live there. Changed language on iPad to english no problem. But downloading apps, books etc from iTunes all come in French and there doesn't seem to be a way to change them to English. Even though they are bought through UK iTunes they still download in French.

Is there any way to overcome this problem? Any help very much appreciated.

How did you change the language? By changing the keyboard, or by changing international settings? Also, some apps have their own language setting built into them.

Btw, I live in Paris and buy apps on both the French and US iTunes...all of them display English (except the apps that I bought specifically in French)

Not all apps are polylingual. Some are only available for use in the language of the person who wrote it. If they don't make a local version you're out of luck.

I think that you are using the French store without realizing it... Also what apps are the ones with problems? maybe everything you have downloaded is pure French apps....
