Just an update, I called this morning around 11AM and I kid you not, I was on hold until 2:30 PM (i wish I had taken a pic of the call duration, not even joking lol) but yeah i'm a patient person so it didn't bother me too much and i've worked in retail a lot so I know how stressful and swamped the Apple employees are but anyways, the guy was able to update my payment method from Apple Pay to a different credit card and change the shipping name as well. So definitely give Apple a call and they will take care of you but do keep in mind the hold times will be pretty long but if you stick through it, you can get the adjustments made to your order.
