going from 5S to SE ... are text messages transferred to the new phone during the back up and restore process?
As the others have indicated text messages can be moved to your new iPhone. Here are the details on the type of messages covered by an iCloud backup or iTunes backup: iMessage, text (SMS), and MMS messages (requires the SIM card that was in use during backup).for either iCloud or iTunes backup / restore?

Also as willmtaylor indicated, turning on encryption for your iTunes backup will also save your passwords ( including Wifi ), health data and App data, Contacts, Camera roll, etc...

So you brought back this thread from 3 weeks ago without reading the other responses and only to post something that's already been mentioned several other times?If you want health data and passwords as part of the backup/restore you will need to perform an encrypted backup. FYI!
You can also do iCloud backup. Health and watch data is stored there as well. Not only iTunes encrypted.I'm telling you, had I known this a week ago I would have been a lot happier. Sarcasm not on.
