I drive 8 hours nightly five days of the week and always listen to podcasts or Spotify. My phone gets used a lot. As far as prolonging the battery should I just leave it plugged into a charger in my truck all the time or am I better off letting it drain down a bit and then plugging it in??

You're going to get tons of advice, some good and some bad. Your best bet is to head over to Apple's webpage regarding Maximizing Battery Life and Lifespan, it contains quite a bit of information about the batteries in most of Apple's devices. Once that page is open in Safari, you can go to File > Export as PDF... and save it for reference.
 
If it’s just using Spotify or for podcasts then you could just leave it plugged in. You’d end up putting less cycles on the battery this way.
And if and when the Optimized Charging kicks in leaving it plugged in would be the best way to go.
 
I wouldn't leave it in the truck all the time. When it is in the truck I would be aware of its location, laying over a heater wouldn't be good for the battery.

When using your device in a very cold environment, you may notice a decrease in battery life, but this condition is temporary. Once the battery’s temperature returns to its normal operating range, its performance will return to normal as well."

Since you are speaking about night time, I’m assuming high temperature won’t be a factor.
High temperature is the worst enemy of your battery.

By the way even keep it 100% charged every day, for 7/8 hours, isn’t very healthy for your battery, so I would suggest to let the battery drains a little bit, around 50%, and then charge it again until 80/90% is reached.
This requires a little attention on your part (and helps keeping you awake 😁) but would minimize the impact on your battery.
 
All the advice above is correct, but managing that in your case is going to be difficult or annoying or both. What I do is to use an iPod touch that's more or less dedicated to use in the vehicle. You could also use a used phone like an iPhone SE as a iPod, and that might be cheaper than an actual iPod. That way battery condition is a relatively minor concern. I download music and podcasts to the iPod. If you want to stream anything, that obviously wouldn't work (and you probably wouldn't want to have a second cell line for your a dedicated truck phone).

Since fiddling with a phone while driving is dangerous to you and everyone else on the road - just leave it plugged in while driving
