I normally use http://www.epowermac.com.au/. They aren't always the cheapest but they aren't hideously expensive either, plus all their RAM has lifetime warranty and I've not had any problems with them. They are based in Brisbane though, so shipping is cheaper to Brisbane than the rest of Australia.

The thing about lifetime warranty for ePowerMac modules is, aren't they really limited to the lifetime of ePowerMac?
 
Starting to think I should return my mac mini before I open it and get the memory upgraded :( sounds complicated

Yes, for the Mini it is actually very complicated. Getting it open that is. Once you're in it is no harder than any other computer.
 
Do you think some sort of apple store would do it for me or an apple repair place? I dont really want to have to send my mini back to apple

Yes, of course an Apple service center will install the RAM for you, they'll also charge you their standard hourly rate to do it.

Cheap Apple Memory

:D - I found cheap memory from a mob called macmemex - macmemex.com.au . They were extremely helpful and I got the memory the next day.
