I noticed that my Music is pretty choppy when I’m playing it over Bluetooth in car. No issues with AirPods, Bose qc35 or AirPods pro. However when I’m in the car it skips here and there. Is this a problem with the 11 pro? Didn’t have this issue with my X before.

Same here: I use Tune2Air on my Audi Q7 and it has always been running good with my iPhone 7 Plus.
Now that I’m on my new PRO Max it’s kinda disaster... don’t know if it’s due to the new iPhone or the new iOS, but it’s definitely a disaster.
