Clean Install on M1 mini with Monterey Beta installed

Hi All:

I am getting ready to sell my M1 Mac mini (would love to do it here but my post count is still too low )

I want to erase the HD and put a fresh non Beta version of Monterey on it. When I go into recovery mode it just offers to put the Beta on.

Annoyingly I have the SWSCAN update problem with the Beta which I never did figure out.

If I erase the entire hard drive in recovery mode and attach it to the internet will it download a new OS and install it?
