I have this macbook: Apple 13-inch MacBook Pro with Touch Bar: MV962TU/A 2.4GHz quad-core 8th-generation Intel Core i5 processor, 256GB
When I buy this mac, I just used the back up from my old iMac. So I think there are some problems connected to that so,

I want to perform a clean install with and usb drive but I think there would be some problems because of the T2 chip. Is there a easy tutorial for this or would someone writes the steps here?
(And should I wait for the macos 11 or just perform clean install and then update?)

After clean install, if I use my TimeMachine back up to restore apps will it be a mistake?

If you use TimeMachine it won't be a 'clean install'. Take the time, and create a new system, you can still take what you need, most apps aren't specific to the OS, but often debris around.

To boot/install from the USB flash drive, you first need to do this:

1. Reboot to the recovery partition (Command-R at boot)
2. When you get to the utilities menu, open "Startup Security"
3. Set the "secure boot" option to "no security"
4. Set the "external boot" option to "allow booting from external media"
5. Quit Startup security, insert the flash drive, and now try to boot from it.
