I was cleaning my old early 2011 MacBookPro. I noticed on the charging port some metal was showing through. The dark grey areas were chipping off when I was using a toothpick. Is this normal and is the grey part buildup?

That's normal wear. It's at least 5 years old and wear like that is normal. It's nothing to worry about and still completely safe.
Thanks! Should I chip away the rest? I also had to borrow a T charger since mine got frayed. I have to mess with it a bit to get it to charge orange. I was wondering if this was the cause of it.

The older style chargers are not the cause of it. It's just age and normal wear. You can either leave it as it or chip the rest away. It won't hurt anything thing to leave it or remove it. I'd suggest leaving it in place until the next time it's cleaned.
