Clicking Erase all data will update the iPhone?

Suppose 6.1 comes out soon and apple stopped signing and i wanted to restore and wanted to stay on 6.0.1 will erase all data in settings do the trick for me? or will it update my iPhone?

It will simply put the phone on a default state.

As long as your iphone is not JB an erase all will keep it on the same firmware version and just erase all.
