as per title, does anyone know the iPhone directory (im using iexplorer for mac) in which safari stores the icon's it creates when you save a URL to your homepage via the 'add to homepage' option ?

Lol you're very welcome. That's where the webclips icons are located (in each of their respective folders assuming you have multiple webclips on your Homescreen).
