On every webpage on my 13" 2017 MacBook Pro, there is a large difference in colour saturation between Safari and Chrome. I haven't tried other browsers. Chrome looks better to the eye as the colours pop more on the P3 display, but may be less accurate?

You must be using a recent Mac with Retina P3 display. Google Chrome doesn't support this yet, while Safari does, and consequently many webpage elements in Google Chrome look oversaturated. This is a big reason I use Safari for general browsing on my 5K iMac, and considering the Late 2015 5K iMac was the first to feature a Retina P3 display for increased color depth, none of the other major browsers are in a hurry to support it.
