When I was looking at the Watch website, i noticed it said: "To see your progress and trends over longer periods of time, there’s Fitness, an Apple Watch companion app on your iPhone." So does that mean there will be another app called Fitness on your iPhone, or is it just part of the regular companion app?

Activity app will deal with all things fitness. Companion app will deal with Apple Watch settings eg. Home screen layout. See iOS 8.2 beta 4 threads. It's unlikely the two will be intertwined. Companion app may even just be in Settings on the iPhone.
 
Personally, couldn't Fitness be rolled into Health, so there's just a new 'Fitness' section of Health. Seems silly to have an extra app.
