Am I missing something? I have a thunderbolt-vga cable and the computer cannot detect the monitor. I tried going into settings and then display then clicking on "detect monitor" but still nothing.

Am I missing something? The only way I can get it to connect is if I restart my mac. It's a little frustrating since with Windows all I had to do was hit "Win-P" and it was all set.

What exact Mac, what exact display model and what exact Mini DisplayPort to VGA adapter and cable do you have? Normally it is easy to get external displays recognised, but it seems, something is wrong in your setup. Also what Mac OS X version do you use?
 
I have a Macbook Retina w/ 16 gig ram

Now I'm using Mountain Lion. This happened with Lion as well. The cable I have is the one that is the "Mini displayport to vga adapter" http://store.apple.com/us/product/MB572Z/A

When I pull out the cable from the macbook (since it's not working) the screen turns blue for a second too.
