Considering Jailbreak but...

I tend to be a bit paranoid. I am interested in developing stuff for my product, but since I have a windows computer (apple seems to be evil when it comes to this) and can not use XCode or the SDK. Anyways, I want to jailbreak it so i can play around with it but I am unsure. Are there any security risks to getting my product (i have an itouch) jailbroken? I don't want anyone to steal/use my mail service or anything along those lines. Am i safe if i decide to go and get it hacked?
