The original photos have correct dates, but when I copy them to my NAS server the "content created" date changes.

That date is most likely being stored in some xattr that isn't supported by the filesystem you're copying the data to. It certainly isn't part of the directory structure.

I should have mentioned that this is being copied to an exFAT formatted WD drive.
 
I noticed this is now happening with all photos I modify or export to that drive, all dates will be switched to whenever I modified (in the HoudahGeo GPX app) them rather than their actual creation dates.

When I copied it to my desktop, the creation date didn't change. So I'm at a loss now on what's going on or what to do. I'm not sure if this is isolated to Samba or the exFAT formatting of my WD Blue drive.
