So, is it true that I can use my own European (provider) simcard when I order the contract free T Mobile full price iPhone 6 from Apple's own site?
 
Yes, you should be. I just tried 2 international sim cards and both worked with my iPhone 6 purchased through apple.com t-mobile full paid option.
