Thinking of buying a second hand 2011 MBP but was wondering if it is possible to convert a 15" anti-glare display to a glossy display?

possible, but you'll be paying a lot to downgrade the screen. not recommended

Yes. Buy the laptop, then buy a glossy display assembly (e.g. ebay, ifixit), swap the displays and sell the antiglare display assembly.

Just get one with a glossy screen from Apple refurb. Unless the deal you're getting is too good to pass up AND you're really interested in learning how to take one apart...
