Does anyone know of any software that will allow me to convert an AVI to MP4/H.264 and at the same time speed up the playback speed so that it can be played back quicker on the iPod?

Why do you want it played back quicker?

Convert it to .mp4 with VisualHub then open it with iMovie and adjust the playback speed.

Because they are very boring training videos. I tend to fall asleep if I listen to them on normal speed.:)

If all else fails I will try your suggestion. I'm sure a few months back I found some software that allowed me to change the frame rate and keep the audio in sync, but I cannot for the life of me remember what it was called.

Changing the frame-rate in VisualHub doesn't affect the playback speed. It just duplicates frames and the video stays at normal speed.

I think the best way to do it is iMovie - you got it with your Mac for free.
