I need to copy files from an old lc475 to a powermac 7220. Can I do this using scsi or adb? If so How? do I use apple talk through the chooser? I need to do this so I can give these two old macs to others.

You can use ADB for Appletalk. Just connect the two computers with an ADB cable and then you will have to turn on Appletalk in the chooser and then sharring in the control panels and then chose a folder to share on the computer. Just be aware that using Appletalk over ADB will be slower then a glacier flowing uphill.
I have in the past actually just used Stuffit of another compressor to compress and split the data and then copy it all over using floppies. Yes it takes a while but it is sometimes faster then ADB though the downside is you can't just start it and leave it to finish like the appletalk transfer.
