I've seen different spacings for GB and I'm confused... How is it really supposed to be written?

1GB or 1 GB
 
I don't think it's too critical, though the compulsively pedantic (of which I usually am one) would likely say the former (sans space) versus the latter (with space). I do believe that's the more commonly accepted method of expression.

There is only something like a 7% ballpark difference between the two, so either is good enough for government work. 😉
 
If you were writing it in an article, you'd write it "one gigabyte" instead of "onegigabyte." Therefore, I prefer "1 GB."
