There's a nearly new 16" MBP for sale near me with a water damaged screen (water was spilled and there is now light bleed in the corner of the screen causing a lighter area about 10cm x 10cm).

How much would a new 16" screen assembly/panel cost if repaired by Apple? Would a third party repair invalidate warranty?

A 13 inch 2018 MacBook Pro was quoted by Apple to replace at around £600 - luckily AppleCare covered it. I expect the 16 inch would be even more.

I think the problem with third party repairs of a 16 inch will be availability of parts. I'm not sure it's doable economically.

In the US at least, a 3rd party repair can't void the warranty, but liquid spills would. How can you be certain that none of the liquid got inside the computer itself?

I wouldn't go for water damaged MacBook. It might be working fine for now and the only damage you see is a screen - you never know what may happens is 6 months from now.
