iPhone 11 Create new apple ID and iCloud email?

So I have an existing Apple ID which is fine and I can still use it but however I may reserve that for my iPad now specifically as I like to keep it seperate.
Neither here nor there but how do I set up a completley new Apple ID with an eMail address WITHOUT BACKING UP TO ICLOUD.

I don't want to back up my stuff to the cloud and I am fine with syncing to my mac manually.
I wanted a whole new email address also and that's why I want to use iCloud.

Create the new ID and password, use it to sign into iCloud on the phone, then toggle iCloud backup off in settings.

make sure you don't change your iTunes and app store email address. If you do, the purchases you made will not transfer to your new iTunes and app store account.

yes I understand, just may start all over as I didn’t make too many purchases with the old account anyhow and haven’t used it in 2 years.
