I tried to update to the Creators update on my Mac Mini 2014 but every time I update (no matter what method I use) it always restores my previous version of Windows and doesn't update. I've tried Windows Update, The assistant, and even reinstalling Windows 10 anniversary then trying to update. It always fails.

What about using an ISO image to install?
I use ISO image to install my Windows 10 enterprise with creator update and so far so good.

Took 3 tries on my Mac Pro. Then it worked.

Went smooth and first try on my Dell and my HP.

So, just retry until it works. Let the manual update tool from the Microsoft website do it until it works. Yep, uses some data to re download each time.

Also, when it tells you it's going to restart in 30 minutes to do the update, just click to restart now. Then don't click anything and just wait patiently for it to do it.

When I tried to restart manually, it would fail.

OP, you could be "blocked" (or not) by MS. Our VMs on Mini Servers haven't been allowed to update, pretty much pissing me off. I moved a few of the VMs to my rMBP to troubleshoot what could be causing the failure to update. My GF made me aware of this MS blog post from a few days ago:

IOW, MS has the Creator's Update on a rolling schedule, with more-capable machines getting priority. One of the VMs that kept getting rejected on a Mini Server updated with no issues when it was running on my rMBP. :mad:

My Bootcamp went haywire when I tried to force Windows 10 Creators Update using the ISO in Windows 10 Anniversary Edition. It installed, but on boot I had to go through this first-time Creators Edition process and the touchpad didn't work and USB-C doesn't work (MacBook Pro 2016) so I was stuck.

Upon shutting down and trying to boot into macOS my entire macOS partition is gone. I only have a 80GB Bootcamp partition + unformatted space according to Disk Utility (using Internet Recovery to access disk utility) and when running First Aid it claims I have corrupted partitions on the drive and it tells me to run first aid using recovery (which is what I'm doing) in order to fix it.

Luckily I had a Time Machine Backup from Sunday, which was a good thing as I was forced to reformat the entire drive as Disk Utility didn't want to do anything with the drive other than format it.

Tried 5 times on a Late 2013 MBP with no luck. It tries to install and then restores back to anniversary update. I've tried with the install tool and just the regular windows update. No idea how to resolve.

Windows 10 Creator don't work on mac mini 2014 - see my post on apple community forum, microsoft forum and intel forum - intel video drivers is not compatibile with mac mini '14 hardware so before update to creator and instal manually intel drivers computer put into BSOD ( acpsi.sys error ).
For now is no any solution for that :)
