Currently on AT&T Unlimited data plan - can I switch off?

I am currently on a iPad 3g unlimited plan for AT&T. Going away for 6 months where will not have 3G service. If I lower my plan (to the 14.95$ per month) or cancel for 6 months, will I have the option to re-subscribe to the unlimited?
