Is there some way to use custom sounds to notify me when I receive emails from different accounts and text messages, etc.?

Create an audio file and rename the extension .m4r. Make sure it's not already in your iTunes library. Then double click the file and it should open in iTunes under "Ringtones".

To make a tone out of a library song:

Go to edit song info, change the start and stop times to what you want the tone to be (<40s). Then right click the song in the library a convert to aac. Doing that creates only the clip you selected. Now delete that AAC file from your library and locate it on your disk. Rename the extension to .m4r and then open the file and it'll appear in ringtones. Don't forget to undo the timing on your original song.

Yes, you can set specific tones for specific contacts. in their contacts entry, you can add specific ringtones for phone calls and text tones for texts.

in settings>general>accessibility you can also enable your own vibration patterns and then assign them to contacts.

not for emails though yet.
