Is there a free MacOSX app that will allow me to save a 3 page pdf document into copies but with whatever page combinations of that document I prefer?
I don't want to purchase AcrobatProfessional for that reason that's why I'm searching for alternatives!

I have yet to find a good (read: customisable / flexible) PDF editor aside from Acrobat Pro / DC. If you want to properly edit PDFs, you'd best pony up the cash for it - or see if the trial version allows you to edit / save your changes while you work out just how important it is to your wallet...

Preview can do it, which comes with your Mac.

View menu -> View as miniatures -> Select a page in the left side, and press the delete button -> Save as. -> Since, repeat as needed.

Preview app in your Utilities folder will do that and more.

Even add signatures to PDF’s with your Mac’s built-in camera.
