I jailbroke my phone but now that I restarted the phone the Cydia box is grey. Whenever I select Cydia it opens and closes immediately. What should I do?

Try rebooting it again. If all else fails, re-jailbreak, unless you want to try re-installing Cydia.
It sounds like the jailbreak didn't completely work. I saw something similar when I tried to jailbreak before. I would think that you could try to JB again without restoring. Also remember, if you are jailbreaking iOS 4.1 with Greenpoison or Limerain, iTunes has to be open & has to have an internet connection.
You need to reboot the first time, if you are on 4.2.1, it is a Tethered Jailbreak which means that for Cydia to work you need to re run Redsn0w (use the reboot tethered option)
