Deactivating old phone before activating the X?

I have Verizon and was wondering if I could deactivate my 7 plus (for a trade in) before I activate the X. Is this possible to do?

I basically want to save the unboxing & activation of the X until I get home from the Apple Store with AirPods I get from the trade-in of my old phone 😛
