Yes, the window of time before an iphone owning thief is notified an airtag is following them is reduced, but it's not zero. With a backpack they'll likely have grabbed the valuables and ditch the rest before that couple hours is up, allowing you to find the remainder of your stuff. With a vehicle, place the airtag where it is not easily accessed/located and there's a chance the thief would ditch the vehicle if they can't find it.
Thus an item with an airtag has some chance of being recovered, which is better than the zero chance without. Whether or not that chance is worth the price is a different matter.
Just food for thought. They may still not appeal to you.
BTW - for a vehicle with a battery, your better bet is a GPS/cellular tracker since you can provide it with power.
