The 2nd generation iPod touch has some extra hardware hooked up to its headpone jack which didn't exist in the 1st generation iPod touch. That extra hardware is mandatory to work with the mic+remote headphones.
No software-only hack can possibly change that.
I suppose it would be possible to wire up an adaptor that plugs into the dock connector which allows you to plug in the mic+remote headphones and gives you access to some if its extra features. I can't recall the existence or names of any such accessories right now.
