Is there a way to delete preloaded apps on my ipod touch?

And also is there a jailbreak that lets you use the mic, remote earbuds on a 1st generation touch?
 
once you jailbreak an iPod you have full access to the system files, you just need to go to /applications and remove the appropriate folder and respring or reboot your iPod and it's gone

I really need to use those remote, mic earbuds and I can't afford the new touch have any solution?

I have a 1st generation touch

The 2nd generation iPod touch has some extra hardware hooked up to its headpone jack which didn't exist in the 1st generation iPod touch. That extra hardware is mandatory to work with the mic+remote headphones.

No software-only hack can possibly change that.

I suppose it would be possible to wire up an adaptor that plugs into the dock connector which allows you to plug in the mic+remote headphones and gives you access to some if its extra features. I can't recall the existence or names of any such accessories right now.
