I have 3 Apple Devices and I have Messages synced. I am in the habit of deleting Conversations after I am finished for the day on my MacPro, but I see that on my new iPad Pro that ALL my iChats from the past going back apparently forever are still bing pulled in from somewhere. So, apparently when I delete a conversation, if just deletes if off the device I am on?

Is there a way to permanently erase ALL old iChats with various people somehow?

PS - No, my name is not "Hillary"

You would need to delete them on each device that you don't want them on. iMessages are not stored on servers, but basically on any decides that they have been delivered to and would need to be erased on each one separately.

Interesting. So, as an example, if I have a series of iChats between me and my Grandmother, they only reside on my devices and her device(s) until we both delete them?

Correct. That is part of the design behind iMessage that also relates to the end-to-end encryption that it offers.
