connecting to your phone through SSH is more than well documented already around these parts. And you have to jailbreak in order to do that, and this thread is mostly asking for how to do it sans jailbreak.

OP, what you could do is hack through the back up of your phone, find the plist that records the order of your apps, then delete the mentions of the stock app. Then restore your phone from the back up.

Have you tried this and does it work? :)
 
Sorry to resurrect this thread, but I just tried this, and yeah it works. Deleted apps from /Applications, (actually moved them over to ~/removed_apps/), did a reboot, and now they're gone.
 
Why?

why is that that so many online posts end up in debates which are unrelated to the thread? The thread started with a guy wanting to do something in particular. The majority of responses after weren't of any help at all except for the last few. Are people that bored and starved for attention that they must waste everyone's time blabbing about their own personal uneducated opinions. Rather than actually posting a logical and or relative answer to the question at hand. It would sure be nice to go to a forum and not have to sift through useless responses to great questions. People! C'mon! :D
