We have 3x 7,1 Mac Pro's at work and recently installed some dumb PCIe cards and NVME drives because of problems we had with RIAD 0 on the OWC PCIe drives.

Anyway our experience has been much better. BUT today we had to delete a bunch of files (about 500gb) to free up some space and we ran into the problem I had on my 5,1 which you helped me with above. BUT the difference is we cannot write (as well as 'get info' showing not enough space or the same space as before the deletion occurred) to the drives because macOS thinks there isn't enough space on them.

Is this TM Snapshots? Do we need to delete them every-time we free ups loads of disk space?

first things first: you deleted or you just moved files to the trash? In the latter case, please just empty the trash.

Otherwise - depending on which version of MacOS you are running - you can see how and how much storage space is used on your Mac and how much space is available.
Regarding the TimeMachine snapshots - if you have a full backup and sufficient space on e.g. an external or “other than system” drive TM backups too, you can delete them. To avoid the creation of snapshots and automatic storage of the last complete TM backup on your system disk, make sure that your designated backup drive is constantly available - see the info provided by Apple in the link above.

Deleted. Its work drive that is used to keep Audio Mix sessions on and when a series of shows are mixed/finished we back them up to storage and start a new show on the work drive.
