With delivery dates still a few weeks out on most iPhone models and store availability hit or miss I thought this might help some.

When you go to order a phone that is not available and you see an option that says "delivery with setup", add the item to your cart. When setting up to be delivered it should allow you to pick a date/time (that's important). So my new Max, which didn't have that delivery option yesterday, is now arriving tomorrow instead of mid-late November.

Not sure why this happens, maybe the 3rd party company that sets it up has different stock but at first glance most people wouldn't bother with this option and just see the extended delivery dates thus giving up. So if you see the "delivery with setup" option and it lets you pick and date/time then you're golden.
 
I guess this depends on location? Because I'm on apple.com and I checked and I don't have that delivery with setup option. I've seen it before but for some reason they must have disabled it per location based.

I'm sure it does and also the device as well. Like I said in my first post, yesterday the option wasn't there for me when looking at the same device but today it was so I snagged it.

Yea must be dependent on location because I just checked on my phone, iPad, Mac and no option here lol. Not that it matters because I already have one.
