With delivery dates still a few weeks out on most iPhone models and store availability hit or miss I thought this might help some.
When you go to order a phone that is not available and you see an option that says "delivery with setup", add the item to your cart. When setting up to be delivered it should allow you to pick a date/time (that's important). So my new Max, which didn't have that delivery option yesterday, is now arriving tomorrow instead of mid-late November.
Not sure why this happens, maybe the 3rd party company that sets it up has different stock but at first glance most people wouldn't bother with this option and just see the extended delivery dates thus giving up.
