I have an iPhone app which is thoroughly tested on my iPhone.

I wanted it to showcase it to my client. I made video of app on simulator with some screencam software.

    All is fine.

Now the client is interested in getting the real feel of the app on by loading it on his iPhone.

I can't demo to him personally because we live at places where i can't go and demo.

Any way to get around with this

One of the way is to get him jailbreak his iPhone which i don't want to do

*I am enrolled in Apple Developer Program*

Build him an AdHoc copy and send it to him. He would then sync it through iTunes.

    how would all that work

Do i have to inform Apple about it before doing that?

Any docs explaining the process would help

*Though my ultimate aim is to take my app to App Store but before that i would like to demo my app*

You create the adHoc distribution profile through the itunes program portal, you have to be enrolled in either the standard or enterprise program to access the itunes program portal

Read all the documentation on doing an AdHoc distribution. It's all there on Apple's iPhone dev site and portal. Shortcuts to following the all these instructions exactly won't work.
