Personally, I think it would be pretty cool to have a Rolex-style Apple Watch face...

Basically some of the Apple Watch faces do correspond to existing Rolex wristwatch faces:
Chronograph = Rolex Cosmograph or Omega Speedmaster
Count Up = Rolex Submariner or Omega Seamaster
GMT = Rolex GMT Master/GMT Master II
Of the chronographs, the Omega version is most famous for being the "moonwatch". It is still one of the few wristwatches certified by NASA for EVA (Extra Vehicular Activity = spacewalks, moonwalks).
The original Rolex Submariner style is one of the most heavily copied looks. Omega has leveraged their long association with the 007 franchise to make their Seamaster an iconic style. There are tons of great copycats/tributes like the Seiko Diver's Automatic which itself is considered a worthy classic now (and probably keeps more accurate time than the Swiss watches for about $130-150).
Back in the Eighties, Seiko marketed a Speedmaster that was kind of a cross between the Chronograph (three complications and tachymeter) and the Submariner (count up dive bezel).
The GMT watch face is
very strongly tied to Rolex. There really isn't a classic Omega wristwatch with a similar face.
If you had to pick one Apple Watch face that said "Rolex" it would be the GMT face in the classic blue-red color pairing.
