Detecting Jailbroken iPhone

I Jailbroke my 3G S and after 2 days decided that all the fuss with DFU restarts etc wasn't for me so I did a restore in iTunes back to standard.

If I need to take it back to Apple for any reason, will they be able to see that i have previously Jailbroke it on their diagnostic tests?

If the Jailbreak detector turned red, they'd be able to detect that you have previously jailbroken your phone.

If you backed it up to a backup that was jailbroken, yes. Factory restore should do the trick

If you restored as new your fine. Keep Apples firmware jailbreaking is not for you.
