I Jailbroke my 3G S and after 2 days decided that all the fuss with DFU restarts etc wasn't for me so I did a restore in iTunes back to standard.

If I need to take it back to Apple for any reason, will they be able to see that i have previously Jailbroke it on their diagnostic tests?

If the Jailbreak detector turned red, they'd be able to detect that you have previously jailbroken your phone. :D

    Just kidding, you'll be OK

If you backed it up to a backup that was jailbroken, yes. Factory restore should do the trick
