I have a Iphone 3gs. How can I find out the encryption of a wireless network; either WEP/WPA/WPA2. Is there an app or can I find out that information in WIFI settings.

WIFI settings wont give it to you, it will just tell you that it is locked.
There used to be some WIFI sniffer apps in the appstore that would do that, but they have been banned. WIFI Trak was one of them, and I was lucky enough to download it before before they banned them. You might do a search in the appstore and see if you can find something, but I doubt that you will.
I'm also pretty sure that some of those WIFI apps that Apple banned can be downloaded from cydia if you jailbreak.
