I recieved an extra 2gb of memory when I ordered my refurb back in May. I can only assume that in order to guarantee shipping times, they go ahead and upgrade you if they are out of stock. Afterall a happy customer is a repeat customer.

Make sure you notify Apple. If you ever bring it back for warranty, they'll replace it with another 320GB.
